A quick, easy, delicious meal using lamb chops
Important to note – lamb should not be served rare like steak.
Always render the fat.
Preparing the meat:
- Place the chops in a Tupperware and pour over olive oil and lemon juice.
Close the container and leave to marinade (half an hour or overnight). - If you are using a charcoal grill, you can light it now and wait for the coals to reach preferred temperature.
If using a gas grill – wait until you have finished preparing your side dishes. - Once all of the side dishes or your charcoal is ready, you can remove the chops and place them on the grill.
- Grill on the one side for approximately 3-4 minutes or turn if you notice it getting a bit too charred.
- Turn over and sprinkle any seasoning of your choice over.
- Turn over again and sprinkle more seasoning on that side.
- Remove from heat and allow to rest for a minute or two.
Grilled veggies:
- Pre-heat oven to 350˚
- Place your choice of veggies in an aluminum container.
- Sprinkle olive oil, salt and pepper and some garlic salt over.
- Bake in the oven for approximately 40 minutes.
Potato in aluminum foil:
- Thoroughly wash the potatoes.
- Individually wrap each one in layer of aluminum foil (you can do this with whole onion too).
- Place directly on the coals, you can place one or two coals on top, but do not cover completely.
- Leave in coals for approximately 20 minutes, making sure to rotate after 10 minutes.
- Poke a sharp object in, if it feels soft, then the potato is cooked.
- Remove any aluminum foil, and slice open.
- You can smother some butter and your favorite seasoning or just salt and pepper on it.
Lamb chops pair well with any of the following:
- Side salad – green, mixed, coleslaw
- Garlic bread or rolls
- Any potato dish – loaded potatoes, potato salad, scalloped potatoes, creamy mashed potatoes
- Veggies – grilled, steamed, baked
