Overnight Sosaties (Kebabs)
- 1 Whole leg of lamb cut up into cubes (you could also use this recipe for your chops)
- 2 large onions – sliced
- 2 cups of apricot jam (preserve)
- 1 teaspoon salt
- ¾ teaspoon pepper
- 3 heaping tablespoons of curry powder
- 3 tablespoons vinegar
- 2 tablespoons water
- Sauté the onions.
- Make a paste out of all of the dry ingredients and the vinegar.
- Add to the onions and mix well until the oils from the spices have come out. If you are afraid it might burn, adds tiny amounts of water as needed.
- Add the jam.
- Once it is all well combined, pour it over the cubed meat.
- Allow to lay covered overnight, stirring the meat occasionally to rotate the mixture.
- Use a skewer stick to drive through the meat, making kebabs.
- Slowly roast over a barbeque, while using your favorite salt to season it as needed.
